Hello my beautiful peeps!
I have a tasty, easy and healthy recipe for you guys today. I have been seeing lots of recipes on “mug cakes” or “mug cupcakes” but I could not find one that consisted of ingredients I already had or did not require regular flour.
I took some inspiration from other recipes and came up with this.
Things you will need:
*1 TBSP of Coconut Flour
*1/2 TBSP of Cacao Powder (you may substitute with cocoa or carob if you’d prefer)
*1/4 TSP of Baking Soda (not Baking Powder)
*Pinch of Salt
*Dried unsweetened coconut flakes (Completely optional and the amount you use is up to you. I added about a teaspoon)
*2 TBSP Light Agave Syrup (regular Agave may be used instead)
*1 TSP of Coconut Oil (For greasing the mug)
*3 TBSP of Coconut Milk
*1/2 TSP Vanilla Extract
*Your favorite mug 🙂
1. Grease the inside of your mug with 1 tsp of coconut oil. I find it easier to let it melt inside the cup and then swirl it around until it greases up most of the cup (at least 3/4 of the way up).
2. Scramble the egg inside your mug
Set Your Microwave for 1 1/2 minutes
Once the 1 1/2 minutes have elapsed, your mug cake will slightly deflate and should look something like this:
It is pretty much identical to a regular sponge cake without all the unhealthy ingredients and bake time.
If you want to make this recipe super special, you can whip up some coconut milk fat and top this off with some coconut whipped cream…yum!
I hope you peeps give this a try. It tastes like a light chocoloate cake with a hint of coconut. It is very light and satisfies that sweet craving without using any refined sugar. You can enjoy this warm or chilled and you will only have a mug and a fork to clean up afterwards!
