Peaches & Crust

   You read that correctly: Peaches and Crust! It isn’t quite a cobbler, it isn’t a pie…in all honesty, it’s not what I set out to do…but it turned out pretty damn good!

   I’ve been searching for a good peach pie or cobbler and I have been disappointed recently. Even in the grocery stores, all the pies are full of sugar and a laundry list of crap ingredients. After searching through lots of recipes, I came up with this dessert. 

   I didn’t have enough ingredients to make a traditional pie so I just worked with what I had. I don’t even have an actual pie dish so I used my 4 cup Pyrex oven safe bowl. Sure, I could have purchased a pre made pie crust, but those are loaded with bad ingredients and would pretty much defeat the purpose of me making a healthier dessert. Lets get to it!

Things you will need…

Crust:

3 Pitted dates (chopped)
1/4 cup rolled oats

2 tsp solid coconut oil

2 tsp maple syrup

Dash of cinnamon 

“Filling”

2 Peaches (cored and sliced but not peeled, you can peel them if you’d like)

1 Tbsp Lime juice (you can use any citrus)

1 Tsp of solid coconut oil

2 Tbsp Maple Syrup

Dash of Cinnamon

Instructions:

-Put all the crust ingredients in a food processor and blend until the mixture starts holding together. Stop and scrape down the sides at least once.

-Spread crust evenly on the bottom of your pie dish. Set aside and preheat your oven to 350° while you make the “filling”.


-Place the “filling” ingredients in a sauce pan and cook, uncovered,  on medium heat until peaches are softened, about 7-10minutes. Make sure to stir occasionally. 


-Transfer all of your filling into the pie dish and bake at 350° for 30-40 minutes or until peaches are completely softened.


Serve warm with some So Delicious Cocowhip (instead of ice cream) or chill before slicing.

   So upon serving this dessert, whether warm or chilled, the whole thing kind of fell apart…and that’s how this became “Peaches & Crust”. Perhaps if I had enough crust to come up the sides of the dish, it would have held together better. Either way, it was delicious!

I hope you peeps give this recipe a try. It was so good, it was all gone after dinner.
